I heard somewhere they only use standbys for matinee (spelling is way off, I know, bu I'm too lazy right now to fix it ) preformences?

That's the case with a lot of shows, but as far as I know for Wicked, that's only the case if it's specifically noted at a given show.

For the shows I've been to standbys only go on if they are needed. Main cast almost always does matinees and evening performances and you're more likely to see an understudy rather than a standby if the main actor(s) is(are) unable to perform for some reason.

Yeah, but some shows specifically state in the Playbill that matinee casts are different, as with Movin' Out and I think Mamma Mia.

OK, Thank Goodness (today!), I was terrified for a second there...I'm seeing a matinee, so there is a chance I will see Sho, Meagan, and David (*drools....*) right? w00t. Thanks! ;D

unless they are sick, or on vacation, yes you will see them.
It's also the case with POTO, kind of, there is always an understudy on saturday for christine.

Ditto with Movin' Out for Wednesday and Sunday matinees. Of course, I saw it on a Monday night, and none of the principals were there, but it didn't really matter-- I didn't know any of them, and the understudies/standbys were great!

Um....this is probably a stupid question but how is a standby different from an understudy? Does a standby go in if an actor breaks their leg in the middle of the show or somthing like that?

An understudy is actually in the show, but switches parts if need be for a given performance. A standby isn't in the show unless something happens to the principal for whom s/he is a standby, and standbys are sort of 'on call' during performances in case something happens, such as Idina falling through the trap door. I believe that swings are pretty much standbys who're prepared for any of several ensemble roles.
